I think it’s been almost a year since I last posted on this site and that isn’t 👏 okay 👏. So, I’ll be throwing more recipes your way on here because many of you have wanted some of them typed out and for your viewing please. Better late than never, amiright?

Before, I give you this secret recipe of mine – Yes, I’ve somehow managed to not share it because it’s just THAT good. My mom asks me to make it every week for her and we all knows nothing is better than impressing your parents.

So, let’s get straight into business because I don’t know what else to say because I’m not used to the #bloglife.

Here’s what you need:

Servings: 2
Nutrition Info:

Ingredients:
– 8 oz. Boneless, Skinless Chicken Breast, cubed
– 1 large Red Bell Pepper, sliced
– 1 clove Garlic, minced

Sauce Ingredients:
– 2 tablespoons Coconut Aminos or Soy Sauce
– 1 tablespoon Raw Honey (This is my favorite brand – here)
– 1/2 teaspoon Sriracha Sauce
– 1/4 tablespoon Arrowroot Starch (or 1/2 tablespoon Corn Starch) mixed with Hot Water

Directions:
1. Place a plan over medium low heat and coat with coconut oil spray. Place in peppers and garlic and sautéed until 3/4 of the way cooked.

2. Add in chicken and season with salt and pepper. Allow to cook for 6-7 minutes. While it cooks, in a small bowl, mix all the sauce ingredients making sure to keep the starch + hot water mixed on its own.

3. Add in the sauce and allow chicken to cook for another 2 minutes. Mix around to avoid the sauce turning into a gel. If you add too much starch, just add some hot water to get the the correct texture.

4. Serve with veggies and rice or over a salad for the perfect lunch, dinner, or meal prep!
